So I have been chomping at the bit to tell all of you about this new offering from Rhum Clément:
Clément Select Barrel. I got to taste this a few months ago and wanted to make sure it was available before a posted my feelings about it.
Clément is an AOC, Rhum Agricole which can only be distilled from select, fresh sugar cane juice that has been naturally fermented before being expertly distilled and matured. Clément Select Barrel is aged in oak barrels that selected for their natural sweetness and intense aromatic properties for at least three years under the scrutiny of the cellar master at Habitation Clément. They aren't really clear on what kind of oak is used, but a solid guess would refill French oak. Whatever barrel is used, what is achieved is excellent. It is a completely accessible, well aged Rhum Agricole with impeccable balance.
Tasting Notes:On the nose, sugar cane, toasted nuts, fruit, wood, caramel, mulling spice and vanilla.
The flavors are a graceful iteration of the aromas in a rich, deep, layered demonstration that is simultaneously easy and completely full of flavor.
The finish is very dry with the spices and oak gorgeously leading the parade slowly fading to a lip smacking reminder of the vanilla.
This Rhum is wonderful and priced so fairly that it is perfect for every use. Definitely sip this neat, but do not fear putting it on ice and please, please do make yourself a cocktail with this!
