Mezcal Monday//Mixology Monday: Mezcal Paloma

This Mezcal Monday is another simulcast with Mixology Monday! This
'Mixology Monday'
month  is
hosted by Joel of Southern Ash blog and the theme is Highballs...I LOVE IT!

So as usual I am thinking mezcal (it is
Mezcal Mondays over here) and a personal favorite "Highball" of mine is a Paloma. I have no idea why I have never thought of trying it with mezcal, but doggone this is super simple and quite tasty. This is a great drink.

Mezcal Paloma

Build in a glass with ice:
2 oz
Mezcal Don Amado-Rustico
1 lime wedge (1/2 oz) fresh lime juice
Squeeze and drop in
Kosher salt (pinch / optional)
Fill with grapefruit soda

If you want to skip the bottled soda you can substitute it with this:
2 oz Don Amado Rustico, 1 lime wedge (1/2 oz) fresh lime juice
Squeeze and drop in Kosher salt (pinch / optional)
2 oz fresh grapefruit juice
1/2 oz simple syrup (adjust to preference)
Shake and strain onto ice,
Fill with club soda

For grapefruit soda, I like Jarritos or Ting and there some other great ones, but these are fairly easy to find for me.
I want to thank our host for MxMo this month,  Joel of Southern Ash blog, for this great idea and for the motivation to make this drink. Here is the roundup . . . .
