Mezcal Monday #6: Don Amado Reposado . . .

Well it is  Mezcal Monday #6 and this week we are going to look at Don Amado Reposado.

Don Amado Reposado is distilled from 100% Espadin Agave, grown at 4,800 feet in Santa Catarina Minas, Oaxaca; fermented in wood vats and double distilled entirely in ceramic pot stills and then aged in barrels that had previously held brandy.

Don Amado Reposado begins with roasting the agave in earthen pits. This technique imbues the agave and the resulting spirit with iterate layers of smoke. Even if the brief resting calms the smoke, while adding cinnamon, vanilla and other spice, the smoke is still there.
Where the aromas show oily nuts, smoke, roasted & stewed fruits, grass and earth they are balanced with toasted coconut, vanilla, cinnamon and myriad of other nuances.
The flavors follow the aromas adding oak simmered with peppers, cocoa and baking spice.
The finish lingers pensively to return towards the stewed fruits and smoked spices. This is mezcal for the masters and the uninitiated.
