Mezcal Monday #5: Don Amado Rustico


Well it is Mezcal Monday #5 and this week we are going to look at
Don Amado Rustico.


Don Amado is distilled from 100% Espadin Agave, grown at 4,800 feet in Santa Catarina Minas, Oaxaca; fermented in wood vats and double distilled entirely in ceramic pot stills. The family has been running this palenque since the 1700s; 11 generations of master distillers. That is history, that is lineage, that is tradition, that is know-how.

Don Amado Rustico represents 11 generations of history, centuries of experience; utilizing the traditional method, it smoke-roasts the agave in earthen pits. This technique imbues the agave and the resulting spirit with iterate layers of smoke. The aromas show oxidized oily nuts, smoke, roasted then stewed fruits (citrus, quince, musk melon), wet tall grass and earth. The flavors elegantly follow the aromas adding glutinous grains simmered with peppers and baking spice. The finish lingers contemplatively, returning back to round stewed fruits and smoked spices. This is fantastic mezcal.
